Distillery exclusive, Roe & Co Japanese Sugi, A rare flavour exploration born out of technical experimentation with Japanese Sugi wood. A first in Irish whiskey, this exciting whiskey showcases a unique wood type, Japanese Sugi, as well as a maturation process never before seen within the category. The wood used for the elongated bungs is an aromatic, lightly toasted Japanese Sugi, known for its highly active porous nature, which imparts a tangible spice and toasted sandalwood notes throughout. I beleive since this has been done the technical file has been changed to not allow this style of cask production with 5 elongated bungs to be done again. This is currently one of a kind.
